Sweet Chilli Crab on Cucumber

SERVINGS – 12    PREP – 10 minutes    DIFFICULTY – Super Easy

INGREDIENTS

  • 1/2 telegraph cucumber, strip-peeled
  • 200g fresh crabmeat
  • 1-2 tbs sweet chilli sauce, to taste
  • 1 tbs coriander leaves, torn if large, plus extra small leaves to garnish

METHOD

  1. Cut cucumber into 12 thick rounds.
  2. Lightly toss crab with chilli sauce and coriander.
  3. Season, then pile onto cucumber rounds.
  4. Garnish with extra coriander and serve.
